History and traditions

Caol Ila was founded in 1846 by Hector Henderson. After early changes of ownership, it was rebuilt in 1879 by Bulloch Lade & Co., greatly increasing capacity. In 1927 the distillery became part of Distillers Company Limited (DCL), later Diageo. The most dramatic change came in 1972, when the old distillery was demolished and replaced by a modern plant with six stills, built for efficiency and scale. In 2011, major renovations expanded washback capacity and boosted production to 6.5 million liters of alcohol annually. In 2022, as part of Diageo’s Four Corners of Scotland project, Caol Ila received a new visitor center, positioning the distillery not just as a production powerhouse but as a showcase of Islay’s contribution to Johnnie Walker, the world’s most famous blended Scotch.

Raw materials

Malted barley is supplied predominantly by Port Ellen Maltings to Caol Ila’s specification, typically in the mid-30s ppm phenol for peated production, with periodic unpeated campaigns for special bottlings. Water for mashing is drawn from local hill sources above the distillery. In contrast to Laphroaig and Ardbeg, which hinge their identity on very high-ppm malt and a heavier smoke signature, Caol Ila’s specification and process aim for a fresher, lemon-brine profile while keeping classic Islay peat in the frame.

Mashing

Milling is carried out on a traditional Porteus mill, feeding a single full-lauter mash tun installed after the 1972 rebuild. The tun has a capacity of 12.5 tonnes, with a cast-iron body, steel base, and copper top. Each mash cycle lasts about 55–60 hours and yields roughly 58,000 liters of wort. The goal is bright, clear wort that sets the foundation for a citrus-led, clean style of smoky whisky. By comparison, Glen Scotia’s mash tun produces cloudier wort for a heavier, oilier spirit, while Glenmorangie similarly seeks clarity but on unpeated malt for a fruitier Highland character.

Fermentation

The distillery operates ten washbacks: eight of Oregon pine and two of stainless steel. These were installed during the 2011 upgrade that increased Caol Ila’s capacity to 6.5 million liters of alcohol annually. Each washback holds a full charge of wort, with fermentation times of 55–60 hours, producing a wash of 7–8% ABV. The mixed-material system offers both the traditional microflora influence of wood and the consistency of steel. Distillation

Caol Ila runs six copper pot stills: three wash stills of 20,000 liters each with descending lyne arms, and three spirit stills of 12,000 liters each with straight lyne arms. This arrangement was locked in during the 1972 rebuild and remains central to the house style. The tall necks and lyne arm configuration promote reflux, while shell-and-tube condensers ensure clean copper contact. A higher cut point in the spirit run emphasizes lighter esters and citrus brightness, setting Caol Ila apart from Mortlach’s lower, heavier cut and worm-tub system. Ardbeg, meanwhile, achieves intensity via purifier-enhanced reflux and very high-ppm malt, a different route to a much smokier, oilier profile.

Maturation (warehouses, cask stocks and practices)

Caol Ila’s spirit matures in a mix of on-Islay coastal warehouses and mainland sites within Diageo’s estate. The core cask policy relies on first-fill and refill American oak barrels and hogsheads for vanilla, coconut and citrus lift, with European oak sherry casks used for depth and specific expressions. The long-running Distillers Edition is finished in Moscatel-seasoned casks, adding honeyed florals to the maritime core. Unpeated Caol Ila—distilled during dedicated campaigns—has become a feature of Diageo Special Releases, often highlighting ex-bourbon wood for green apple, pear and cereal sweetness.
